Easy Low Carb Recipes
Here are a few easy-to-make low carb recipes for you to enjoy. Not only are these recipes easy to follow, but they make excellent dishes. These low carb dishes will have you in shape in no time (along with exercising). They may look too tasty to be low in carbs (and you probably won't be able to tell by the taste either), but these low carb recipes are definitely worth trying.
Spicy Turkey Salad
1 small turkey breast, skinned & sliced
1 teaspoon olive oil
1 teaspoon soy sauce
1 medium kiwi fruit, chopped
Mixed salad greens
1/4 cup brown sugar
1 chopped green chili, seeded & finely chopped
1 crushed garlic clove
1 Tablespoon fresh coriander, finely chopped
Juice & zest of one lime
1. For best results marinade the turkey first. Combine lime juice & zest, garlic, chilli, coriander, brown sugar and soy sauce, then pour over turkey and chill for a few hours.
2. Heat oil in a wok, then add turkey with the marinade and stir-fry for about 8 minutes.
3. Place salad on a dish, then spoon over the turkey and fruit. Serve immediately.
This dish serves 2.
Caribbean Rice & Peas
3 1/2 oz. chick peas (dried weight - soaked and boiled as instructed on package)
1 can vegetable stock
7 oz. cooked long grain rice
1 red pepper, seeded & chopped
1 yellow pepper, seeded & chopped
1 teaspoon brown sugar
5 drops Tabasco sauce
3 1/2 oz. pineapple chunks (from can, keep juice)
1 Tablespoons coconut
1. Add rice to a wok and throw in the peppers. Stir fry for a few minutes.
2. Add the vegetable stock, brown sugar, Tabasco sauce, peas and juice from the pineapple. Gently stir, cover and simmer for 10-15 minutes.
3. Remove the lid, stir in a little rum if desired, along with the pineapple chunks and coconut. Simmer for 5 minutes and serve.
